Fully Raw Carrot Cake Energy Balls
This was a new snack for me to make and we LOVED them! Our oven is currently broken and I really wanted to make something sweet and good for us so —raw deserts for the win!
What is your favourite type of raw/no bake treats?
We love this recipe because it tastes like you’re eating carrot cake without all the gluten and refined sugar of the original recipe. My son who doesn’t even like carrots loves this recipe and it’s very child-friendly to make. These make a great snack or dessert and you can keep in them freezer for when you have a sweet craving.
Raw Carrot Cake Energy Balls
3 medium carrots (washed, peeled and grated)
2 tsps cinnamon
1/2 tsp ginger
1/2 c of cashew butter
1 tbsp coconut oil
1 cup oats (look for gluten free)
1 tbsp hemp seeds
1/2 cup sunflower seeds
1/4 cup honey (local is best)
1/4 cup shredded coconut (unsweetened is best) - to roll the bites in
Add all the ingredients except the shredded coconut into a medium size food processor.
Pulse until the mixture begins to stick together
Once it is all combined, take a small handful and roll them into balls.
The dough will be quite sticky but that’s ok it will dry up a bit after rolling it in the coconut.
Roll each ball info the coconut and then refrigerate for a few hours.
Keep in fridge in a glass container for a few days or freeze.
